Quick Vegan Meals: 15-Minute Microwave Chilli

Looking for quick vegan meals? This 15-minute microwave chilli is perfect for vegan meal prep. This recipe makes five servings and is great for freezing for the week. Best of all, you can make it all in your dorm room with minimal clean-up! It also has lots of protein and servings of veg so you can stay healthy, especially during high-stress periods!

Ingredients

1 cup diced onions
1 can refried beans
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 can diced tomatoes, drained
1 tsp cumin 1 tsp paprika
1 tsp salt
1 tsp cayenne pepper
1 tsp coriander
2 cloves garlic
1/3 cup vegetable broth
1 tbsp fresh cilantro

Instructions

1. Combine all ingredients in a large, microwave-safe bowl.  
2. Cover with a damp towel and microwave on high for 8 minutes. 
3. Garnish with fresh cilantro to serve.
