Growing up, my absolute favourite Indian meal was malai kofta. Sadly, though, I became vegan and it contains cream! I also used to make it at home for my family but, unfortunately, it takes forever and cleanup was a bit of a nightmare as well.
Basically, this curry is super easy, healthy, and perfect for a night where you're feeling a bit lazy about cooking but don't want to spend more money eating out!

1 tsp ground ginger
2 tsp garam masala
1 tsp cumin
1 tsp turmeric
2 cloves garlic
1/4 tsp cayenne pepper
1 tsp paprika
1 bay leaf
1 tsp cardamom
1/4 tsp nutmeg
2 cloves 3 tbsp cashews
1 tsp ground cilantro
1 tbsp golden raisins
1/4 can coconut milk
1/2 can diced tomatoes
2 small potatoes
1/4 block of tofu
1/3 cup chickpea flour
2 tbsp olive oil
1/4 cup diced onions
Salt (to taste)
