Easy Vegan Lunches: 10 Minute Microwave Vegan Quiche

Tired of the same old vegan lunches, but don't have time to make an elaborate meal when you're working from home? Try out this vegan microwave quiche for a more exciting, high-protein, veg-filled option!

I absolutely loved quiche when I was a vegetarian, so, when I became vegan, I was eager to find a replacement. The chickpea flour is packed with protein and the veg means you'll be well on your way to your 5-a-day!

Eggless Quiche


5 minutes

Cook Time

3 minutes


1 small quiche


11 tbsp aquafaba
1 tbsp nutritional yeast
1/2 cup spinach
1 tbsp diced sun-dried tomatoes
5-6 black olives
1 tbsp onion
1/2 tsp onion powder
1/2 tsp parsley
1/2 tsp paprika
1 cup chickpea flour
1 tbsp olive oil
2 tbsp vegetable broth
Salt (to taste)
Pepper (to taste)

1. Combine all ingredients in a microwave-safe bowl and cover with a wet towel. 
2. Microwave on high for 3 minutes.
